Sometimes the easiest recipes are also the best. That proved to be the case with the Bacon Maple Pancakes I made as the Saturday night newsroom honored our neighbors to the north, Canada.
This simple recipe put a new spin on a breakfast favorite, combining pancakes and bacon in one dish. I can easily imagine enjoying [...]

Chicken salad is often a summer staple, but it doesn’t have to be the typical picnic fare. We enjoyed foods from India in the newsroom last weekend and I decided the curry in this fruity chicken salad added an Indian twist to the night. It’s also a great way to take advantage of summer produce!
Cherry [...]
It started by watching the Muppet version of “Put the Lime in the Coconut” on Facebook. It continued Saturday night with the Philippines theme.
As I’ve mentioned, I always enjoy coconut, so when I found a recipe cooking sweet potatoes in coconut milk, I was eager to try it. It’s funny how those ingredients can combine [...]
It’s not every week that I can get all my co-workers on board with bringing in foods that match our theme. Sometimes they need some guidance, and when I told them that this week’s theme was Ecuador, I decided it necessary to instruct them not to bring in roasted guinea pig, one of the specialties.
Instead, [...]
Authentic Brazilian fudge (Brigadeiro)

When I noticed this week’s theme was Brazil, I realized I actually had a few sources for authentic recipes, including a handwritten recipe that our Brazilian exchange student, Sylvia, had given me.
Sylvia lived with us for six months when I was 13. She came from Sao Paulo, one of the largest cities in the world, [...]
Burning beans, or a night of Brazilian food

Just because I cook a lot doesn’t mean I don’t still run into problems in the kitchen. This week was an example of this.
The theme was Brazil, and I decided to make Feijoada, a bean dish I knew about from the six months my family hosted a Brazilian exchange student. (See my Brazilian fudge entry). [...]
Most of us have some understanding of international cuisines because they’ve been passed down through families and incorporated into the American diet. The less popular countries require an education when considering international foods. That’s the case with this week’s Saturday night theme: Tunisia
Before this week, the only association I had with the country was from [...]
Saturday night’s theme this week is Germany. There are lots of possibilities, but finding one that was easy to make for a buffet style meal was a little difficult. I decided to go with German Potato Salad.
An interesting Associated Press article offers advice on what to drink with potato salad. Debbie Moose, author of a [...]
Many of us celebrated Easter last weekend, but for members of the Greek Orthodox community, Easter is this Sunday. Greek Easter is one of the country’s most important holidays. It involves a 40-day fasting period, similar to Lent. For one week there is a complete fast, when no meats, dairy, fish or poultry may be [...]
I’m a little behind in posting last Saturday’s theme. We partook in the cuisine of Lebanon. I made a kibbee, which is basically beef flavored with cinnamon, allspice and paprika, mixed with bulgar wheat. I wasn’t impressed with it on its own, so I’ll ask if anyone has any recipes for it that do stand alone.
What [...]
